Who doesn't love a delicious taco Tuesday? One of my go-to meals is vegan portobello mushroom tacos.
Cooking the tacos only takes about 30 minutes, so they're great for when you’re short on time. To top it off, they taste amazing!
I love to top mine with salsa, guacamole, and some cilantro. The perfect healthy lunch or dinner, it’s sure to please everyone at the table - talk about healthy convenience!

Note that some colors of bell peppers have more vitamins than others. For example, yellow bell peppers have the highest level of vitamin C of all bell peppers.

Why I Use Vegetable Broth Instead of Oil to Sauté
When it comes to cooking vegetables, I always opt for vegetable broth instead of oil.
It's a healthier choice without sacrificing taste. It also adds unnecessary calories.
The vegetable broth also brings out the natural flavors and textures of whatever vegetables I'm cooking.
It’s up to you which way you'd like to cook your vegetables but know that vegetable broth can be just as delicious while adding a fraction of the calories!
If you use oil in this recipe, use about a tablespoon to sauté the vegetables.
Easy vegan portobello mushroom taco recipe
Ingredients:
1/4 cup vegetable broth
3 bell peppers (any color, sliced)
1/2 large onion (any type, sliced)
2 large portobello mushrooms (sliced)
Corn tortillas (feel free to use flour tortillas if you are not gluten-free)
1/2 teaspoon salt (or to taste)
3/4 teaspoon garlic powder
Optional Toppings:
Salsa
Avocado
Guacamole
Cilantro
Limes

Directions:
Heat the vegetable broth over medium heat in a large skillet. Add the bell peppers, onions, salt, and garlic powder. Stir the ingredients.
Add the portobello mushrooms to the skillet. Do this until the portobello mushrooms, onions, and bell peppers are soft. About ten minutes should do.
Add the sauteed portobello mushrooms, onions, and bell peppers mix to your corn tortilla. Top with the optional toppings above.
